The summer season produces some of the finest ingredients of the year: a glut of fruit and vegetables, including plump juicy cherries and sweet peaches; fragrant herbs; an abundance of broad beans and courgettes.
London and the UK are enjoying one of the warmest summers on record, with temperatures regularly reaching the high 20s and low 30s. This has meant that crops are at an all-time high: a chef’s dream.
In celebration of summer, Yauatcha has introduced the Summer Collection of patisserie, a collection of five new petits gateaux and macarons inspired by seasonal ingredients.
The Summer Collection includes the Flower daisy, with an almond sacher sponge, fresh peach compote and a vanilla mascarpone mousse, and Strawberries and cream, a depiction of the quintessential British summer, with fresh strawberry compote topped with a Thai basil cheesecake mousse and fresh strawberries.
The five new macaron flavours include lavender, elderflower and ginger, cherry and rose, strawberry and shiso and black sesame and passion fruit.
